Banana Pecan Muffin Recipe


Banana Pecan Muffins

(Makes 8)



150g plain flour

1 ½ tsp baking powder

pinch of salt

70g golden caster sugar

115g shelled pecan nuts, roughly chopped

2 large ripe bananas, mashed

5 tbsp milk

2 tbsp melted butter

1 large egg, beaten

½ tsp vanilla essence



Place the muffin cases in your muffin tray.

Sift the flour, baking powder and salt into a bowl, add the sugar and pecan nuts and stir to combine.

Place the mashed bananas, milk, butter, egg and vanilla essence in a separate bowl and mix together. 

Add the wet ingredients to the dry ingredients and gently stir until just combined.

Divide the mixture evenly between the paper cases and bake in a pre-heated oven at 190 degrees (conventional) 170 degrees (fan) for approximately 20 – 25 minutes or until risen and golden.

Remove the muffins from the oven and place them on a wire rack to cool.
