Fudge Nut Muffins

Fudge Nut Muffins – Makes 12



250g plain flour

4 tsp baking powder

85g caster sugar

6 tbsp crunchy peanut butter

1 large egg, beaten

4 tbsp butter, melted

175 ml milk

150g vanilla fudge, cut into small pieces

3 tbsp roughly chopped unsalted peanuts




Line a 12 cup muffin pan with muffin paper cases. 


Sift the flour and baking powder into a bowl.  Stir in the caster sugar.  Add the peanut butter and stir until the mixture resembles breadcrumbs.


Place the egg, milk and butter in a separate bowl and beat until blended.  Lightly stir in the fudge pieces. 


Divide the mixture evenly between the muffin cases.


Sprinkle the chopped peanuts on top and bake in a preheated oven at 200 degrees (conventional) 180 degrees (fan) for 20 – 25 minutes or until well risen and firm to the touch. 


Remove the muffins from the oven and cool for 2 minutes before placing on a wire rack to cool completely.
